Nutrition, both ways

Left pair of columns is what each package prints. Right pair removes the water from both. The last column is the difference that survives the conversion.

What the numbers actually show

76% moisture against 70% means the printed numbers are describing different things entirely - one includes several times more water than the other.

This is a case where the raw labels point one way and the dry-matter figures point the other: Fresh Smooth Fish reads 15% protein on the package versus Fresh Ground Cow / Smooth Cow at 16.5%, but once water is removed the positions reverse (62.5% against 55%).

Reading the two packages side by side without this conversion would have given the wrong answer on at least one nutrient.
